To date, 10 large companies and dozens of small farmers are engaged in the industrial cultivation of edible snails in Ukraine. They send about 90% of their products for export.

Almost all products of snail farms in Ukraine are sold abroad. So, Ukrainian restaurants buy chilled mollusks from farmers at a price of 180-200 UAH / kg.

Retail prices of ready-made semi-finished products from snail meat reach up to 1 thousand UAH / kg. Some farms sell snail caviar at 1850 UAH / 50 g. So far, caviar is not supplied to the world market due to small production volumes.

In 2016, Ukraine, represented by delicatessen producers, exported snails 7 times more than fat - 347 tons of snails versus 51 tons of fat. Shellfish grown by Ukrainian farmers are bought in Romania and Lithuania. There they are processed and sold to France, Hungary, Italy and Poland, but already more expensive.

Experts estimate the amount of start-up capital for opening a snail farm equipped with special equipment and a processing workshop of € 150 thousand. With this amount of investment, production volumes of 10-15 tons / year can be achieved in 3-5 years, while the profitability of the business will be 100% .
