Selection and preparation of ingredients
Champignons for any dish should be selected very carefully so as not to buy overripe or stale mushrooms. It is better to take them by weight, so there is the opportunity to examine, touch and smell each instance.
Did you know? The first to eat and grow champignons were Italians. And from the French these mushrooms got their name, which in translation from French means simply “mushroom”.
Good fresh champignons:
- beautiful white or brownish, darkened hats with spots indicate stale;
- dense and dry to the touch, not soft, not lethargic and not sticky;
- have a short leg, without voids;
- pleasantly smell like mushrooms, and not mold, ammonia or chlorine;
- have an intact film under the hat.
To cook mushroom pizza at home, the products need to be prepared. Rinse the purchased mushrooms before cooking under running water. Hand-picked mushrooms should be washed more thoroughly with a brush. Large mushroom caps will need to be peeled, as it can be harsh.
Important! Champignon — perishable product. It is not recommended to use mushrooms that have been stored in the refrigerator for more than 4 days, and at room temperature — half a day.
Washed and dried champignons can be frozen and then thawed and cooked as needed. Marinate mushrooms for baking is not worth it.
